Since non-mortally injured organisms are relevant to the quality of the product, a resuscitation should be included in examination procedures based on selective media. If the product to be examined has antimicrobial activity, this should be sufficiently neutralized.

Although the test is designed to detect bacteria belonging to the Enterobacteriaceae family, it is recognized that other types of organisms (eg Aeromonas, Pseudomonas) can be recovered.

The number of bacteria will be assumed to be equal to the average number of colony forming units on the agar medium. The number of fungi will be considered to be equal to the number of average colony forming units on the agar medium.

The aerobic number is the sum of the number of bacteria and the number of fungi, as explained above. This can be corrected if there is evidence that the same types of microorganisms are growing in both environments. If the count is performed using the most probable number method, the calculated value is the number of bacteria.
