Lecithin is a mixture of fats essential for cells in the human body. Many foods contain lecithin, including soybeans and egg yolks. But soybeans are genetically modified, sometimes in mass production, while sunflower seeds are not. Also, no harsh chemicals are used to extract lecithin from sunflower seeds.
