The iodine value indicates the degree of unsaturation of a fat or oil. It is defined as the number of grams of iodine absorbed by 100 grams of fat. Today, the iodine value is calculated from the fatty acid composition using factors specific for each unsaturated fatty acid. Calculation of the iodine value provides more accurate data by removing the unsaturation found in unsaponifiable compounds.
The iodine value is perhaps the most frequently quoted value for an oil. Usually a measure of the degree of unsaturation in fats and oils and waxes, this value is determined by weighing a sample amount whose mass depends on the expected iodine value.
The iodine value in chemistry (iodine adsorption value, iodine number or iodine index) is the mass of iodine in grams consumed by 100 grams of chemical. A high oxirane value and a low iodine value are considered essential for good performance, but they are not the only criteria. The oxirane value is the percentage of oxygen absorbed by an unsaturated raw material during epoxidation, or a measure of the amount of epoxidized double bonds in a material.
Iodine is included in the fatty acid chain wherever there is a double bond. Therefore, the measure of iodine absorbed by an oil gives its degree of unsaturation.
