Gloves made of chain armor to protect against knives and metal or plastic arm guards are used in jobs where a blade moves towards the user's hand and arm, especially when working with hand knives in slaughterhouses, meat and fish knives. Such knives are used in shellfish processing plants, large-scale catering establishments and meat, game and poultry processing plants. Protective gloves and arm guards against knives also provide adequate protection for people doing upholstery and similar work or working with hand knives in the plastic, leather, textile and paper industries.

In the food industry and public health and meat processing sectors, in the production of protective gloves and arm protectors in hygiene and applications, the relevant legal regulations and standards must be observed.

Tests in the EN 1082-1 ​​standard are designed to be serious and, in some cases, destructive to adequately test products. These standard requirements do not mean that the blades will penetrate the gloves or arm guards at great distances in normal use.
