EN ISO 8442-1 Food Contact Materials and Articles Part 1: Cutlery Requirements for Food Preparation

This standard specifies material and performance requirements and test methods for metal cutlery and associated tools intended for use in food preparation.

Blade sharpness and edge grip requirements are intended to be included in this standard at a later date if reliable test methods are established for these properties.

No meaningful test has been developed for the knives' resistance to breakage in use for the standard, but it is thought that this can be partially judged by the appearance of cracks in the initial visual inspection, drop resistance requirements, strength test.

Two types of cutlery are indicated:

• A regular grade with corrosion resistant blades or spikes that can withstand dishwasher cleaning procedures;
• A special grade with corrosion resistant blades that can withstand dishwasher cleaning procedures and sterilization processes.

Non-metallic parts of cutlery must be made of plastic, wood-plastic laminates, impregnated wood or other synthetic materials for the finished cutlery to comply with the relevant performance requirements of this standard.

Non-metallic parts of cutlery should not be superficially protected with paint, varnish, varnish or similar coatings, unless they also comply with the relevant performance requirements of this standard.
